Tuesday's Panko Crusted, Baked Chicken




Tried this recipe last night - there were no complaints so I take that as a success.
Panko-crusted baked not fried chicken (makes 8 servings)
8 - 5 ounce boneless skinless chicken breasts (pound thin if too thick)
3/4 cup panko (a type of b...read crumbs)
1/4 cup Dijon mustard (may sub with spicy Asian mustard)
1/2 cup nonfat plain yogurt
2 Tbsp. sesame oil (may sub with peanut oil)
3 garlic cloves
1-1/2 Tbsp. dried parsley

Wash chicken, pat dry with paper towel and set aside. In large bowl whisk together wet ingredients and garlic. Mix dry ingredients in separate bowl. Dip chicken in mustard mixture and then roll in bread crumbs. Place on a cookie sheet sprayed with nonstick spray and bake at 475 for 20 minutes or until coating is golden borwn and chicken is no longer pink.

I haven't tried to change up the coatings and the seasonings, but I think you should be able to do that. We actually used Italian seasoning instead of the parsley. I would think you could use taco seasoning, cajun seasoning, or whatever you like. You might want to change the mustard base if you do that though. Let me know if you try this!

The Beginning

I have struggled with my weight my whole life. 3 years ago I went from a mom of 1 to a family of 6; from a gym girl 6 days a week to a worn out tv watching sedentary lump. Who has time for the gym with 4 kids, countless activities, a full time job, and a new home to take care of?? Married life and my new family were great, but when the gym time disappeared, my weight that I was able to keep at ...bay reappeared. With a vengeance! I missed the gym, I missed being active. Unfortunately the distance from the gym and my work hours didn't allow me to go anymore. I was miserable with myself, feeling unhealthy, unhappy, and unattractive. I told my husband I needed a change - I had been watching the infomercials for P90X for months. We took the plunge and bought the workouts. We had some great success.... then came vacation, then came the school year, then came life. About a year later I decided to try again with a new Beachbody program, Chalean Extreme - I loved it! I had some real success, saw real results, felt much better. Then came a family illness, then came Christmas, then came life. January of this year I decided I would try Chalean again. This time with a Beachbody coach and an actual challenge group to keep me accountable. It worked! I lost pounds and inches. I felt great, healthy, happy, active again. Then the challenge group ended, the weight started to creep back on...... What I realized after all this time is that I am a very social person. I need accountability, and I need people to do this "exercise and clean eating" thing with me. So instead of joining another challenge group as a participant, I decided to join Beachbody as a coach. Now I would be responsible for keeping myself and other people accountable. And who better to recruit to join me on this journey, than my own captive audience... my family! This page is going to document our journey on the road to health and fitness as a family. We will share fitness tips, provide motivation and encouragement, healthy recipes, and our progress as we navigate the road to a Fit Family Robbins together!
